The lobe of whole half-cooked duck foie gras is cooked at low temperature in order to reveal its noble and authentic flavours. Its way of preparation gives it exceptionnal smoothness. Take your foie gras out of the fridge, turn it out and wait for about 15 minutes, then cut it with a cheese wire or a knife you let under warm water. Put it on a dish and back to the fridge until you want to serve it. You should eat it with a nice farmhouse bread and an onion and grapes jam conserved with Xeres vinegar. Advice of the wine waiter: Taste with it a dry white wine aged in oak barrel because of its round and wooded taste. A perfect example would be the vintage Comtesse de Ségur from Château Laulerie.
