Conserved Pork joint

The conserved pork joint or Enchaud is a pork fillet conserved in duck fat and garlic.   The tradition requests it should be served cold with its thin jelly and with a salad or fried potatoes.  It is quite a delight ! You can also taste it warm with a wine sauce with shallots.

pork joint conserved in duck fat 80%, water, gelatin, salt, garlic, pepper.
